BOTW Bundle Ingredients consists of:
- 1kg Wholemeal Bread Flour
- 1kg Organic Whole Spelt Flour
- 25g Sachet Gold Standard Yeast
- 100g Herb & Garlic Mix
& is enough to make approximately 24 Pita's.
Garlic & Herb Whole Meal & Whole Spelt Pita Breads
( This recipe makes 6 pitas )
- 125g Wholemeal Flour
- 125g Organic Whole Spelt Flour
- 250g Water
- 4g Yeast
- 10g Salt
- 1 Teaspoon of Sugar
- 15g Garlic & Herb Mix

In a large bowl combine the whole meal flour, whole spelt flour, yeast, sugar and garlic & herb mix.
Add the water and mix until there are no dry bits left. Let the dough rest for 15–20 minutes.
Add the salt and knead until the dough comes together and feels smooth. Cover the bowl and leave to rest for 15 minutes.
Perform a set of coil folds by gently lifting the dough from the middle and folding it underneath itself. Repeat this around the bowl until the dough tightens up slightly. Cover and rest again for 15–20 minutes. Repeat another 1–2 sets of coil folds. This helps strengthen the dough and improve the texture of the pita breads.

Cover the dough and leave to proof until doubled in size. Depending on the temperature of your house this can take around 1–2 hours, but don’t stress if it goes longer, pita dough is very forgiving and will still turn out beautifully.
Once risen, tip the dough onto a lightly floured bench and divide into 6 equal pieces. Shape each piece into a ball and let them rest for 15 minutes covered with a tea towel.

Roll each ball out into a rough circle around 3–5mm thick ( I like to use a rolling pin for this ) Don’t roll them too thin or they won’t puff up properly.

Heat a cast iron pan or heavy frypan over high heat and add a light drizzle of olive oil. Once hot, cook each pita for around 1–2 minutes on one side until bubbles form, then flip and cook the other side. They should puff up and develop golden spots.
