This bundle of ingredients includes everything to make 6 loaves
- 2kg Artisan High-Protein White Bread Flour
- 1kg Organic Whole Spelt Flour
- 1kg Whole Emmer Flour
- 35g Dehydrated Sourdough Starter Flakes
- 500g Kibbled Linseed
- 100ml Cold Pressed Sunflower Oil

Ingredients

- 35g Kibbled Linseed
- 315g Artisan Strong White Bread Flour
- 115g Organic Whole Spelt Flour
- 70g Emmer Flour
- 390g Cold Water
- 30g Cold Pressed Sunflower Oil
- 28g Honey
- 10g Salt
Method
(Ensure Sourdough Starter is active and bubbling prior to making dough)
1. Start by mixing all of the ingredients together, except the salt, until no dry bits remain. Cover and rest for 30 minutes.
2. After 30 minutes, sprinkle the salt over the dough and use your hands to gently squish it in until well combined. Cover and rest for another 30 minutes.
3. Begin your first set of coil folds or stretch and folds, whichever you prefer. Repeat this process 3–4 times at 30-minute intervals.
4. Once all folds are complete, allow the dough to bulk ferment until it has doubled in size.
5. When doubled, shape the dough and place it into a lightly oiled loaf tin or lined with baking paper.
6. Transfer to the fridge and cold ferment overnight (or longer, depending on your schedule and flavour preference).
7. When ready to bake, preheat your oven to 230°C.
8. Bake for 40–45 minutes, until deeply golden and cooked through.
