Buckwheat Banana Bread

~This recipe makes 1 Banana Bread~

Ingredients

  • 200g White Buckwheat Flour
  • 200g Unbleached Strong White Bread Flour 
  • 75g Buckwheat Kernels (groats)
  • 3 Ripe Bananas (approximately 300g), mashed
  • 220g Warm Water
  • 7g Instant Yeast
  • 30g Honey
  • 30g Olive oil
  • Pinch of Salt 

Optional: 50g walnuts, 1 tsp cinnamon

Method

  1. Place the buckwheat kernels in a bowl and cover with boiling water. Leave to soak for at least 1 hour, or overnight in the fridge. Drain thoroughly before using.
  2. In a large bowl, combine the mashed banana, warm water, honey, oil and yeast. 
  3. Add the buckwheat flour and bread flour and mix until no dry flour remains. Cover and leave for 20 minutes.
  4. Add the salt and drained buckwheat kernels (along with walnuts or cinnamon if using).
  5. Mix well until everything is evenly incorporated.
  6. Cover and leave in a warm place for 1-1½ hours, or until noticeably puffy.
  7. Because of the buckwheat and banana, don't expect it to double like a standard bread dough.
  8. Place some baking paper in the tin and transfer the dough into the tin and smooth the top with wet hands or a spatula.
  9. Cover and leave for second proof for 45-60 minutes until the dough has risen slightly above the rim of the tin.
  10. Preheat your oven to 190°C.
  11. Bake for 45-50 minutes, until deep golden brown. If the top is browning too quickly, loosely cover with foil for the final 15 minutes.
  12. Allow to cool in the tin for 10 minutes before transferring to a wire rack.
  13. Leave to cool completely before slicing this loaf continues to set as it cools! Serve with butter & honey.
