Buckwheat Banana Bread
~This recipe makes 1 Banana Bread~
Ingredients
- 200g White Buckwheat Flour
- 200g Unbleached Strong White Bread Flour
- 75g Buckwheat Kernels (groats)
- 3 Ripe Bananas (approximately 300g), mashed
- 220g Warm Water
- 7g Instant Yeast
- 30g Honey
- 30g Olive oil
- Pinch of Salt
Optional: 50g walnuts, 1 tsp cinnamon
Method
- Place the buckwheat kernels in a bowl and cover with boiling water. Leave to soak for at least 1 hour, or overnight in the fridge. Drain thoroughly before using.
- In a large bowl, combine the mashed banana, warm water, honey, oil and yeast.
- Add the buckwheat flour and bread flour and mix until no dry flour remains. Cover and leave for 20 minutes.
- Add the salt and drained buckwheat kernels (along with walnuts or cinnamon if using).
- Mix well until everything is evenly incorporated.
- Cover and leave in a warm place for 1-1½ hours, or until noticeably puffy.
- Because of the buckwheat and banana, don't expect it to double like a standard bread dough.
- Place some baking paper in the tin and transfer the dough into the tin and smooth the top with wet hands or a spatula.
- Cover and leave for second proof for 45-60 minutes until the dough has risen slightly above the rim of the tin.
- Preheat your oven to 190°C.
- Bake for 45-50 minutes, until deep golden brown. If the top is browning too quickly, loosely cover with foil for the final 15 minutes.
- Allow to cool in the tin for 10 minutes before transferring to a wire rack.
- Leave to cool completely before slicing this loaf continues to set as it cools! Serve with butter & honey.
