Pizza Bases
- 1kg SNK Pizza Mix
- 600ml Warm Water
- 20g Gold Standard Yeast
This recipe creates 6 dough balls (approx 270g)
Making the dough balls
1. In a large bowl, mix the 20g Yeast with 550ml of lukewarm water
2. Gradually add 950g of the Pizza Mix until a shaggy dough forms
3. Lightly flour a work surface, tip out the dough and using the heel of your hands knead for 5-6 minutes until a smooth dough forms.
4. Cover and allow to rest for 15-20 minutes
5. Knead again for a further 3-4 minutes adding remaining flour until the dough forms a silky smooth surface. Add the remaining 50g of pizza mix here if the dough is too tacky
6. Cover and allow to rest for another 15-20 minutes
7. Cut and divide dough into 270g pieces using your dough cutter/scraper
8. Roll each piece into a tight, smooth ball using the heel of your hand
9. Lightly oil a rectangular container, place dough balls leaving some gaps between dough balls & drizzle with olive oil (optional)
10. Seal container with the lid and let sit for 20 minutes
Making the pizza bases
1. Empty semolina onto a pizza tray or flat bottomed plate
2. Gently remove one dough ball from container and place onto the semolina. Flip to lightly dust both sides
3. Sprinkle a little semolina onto a work surface and transfer dough ball from the semolina to the work surface
4. With your first two fingers of each hand, press from the inside out avoiding the outer rim. (leave 2-3cm from the edge)
5. Lift the newly formed base and place over both closed fists allowing gravity to let the base stretch over your knuckles. Avoid tearing!
6. Flip back over onto the work surface and stretch further to desired size if needed.
7. Add desired pizza toppings.
8. Place into your pre-heated oven and bake as per ovens instructions.
9. Remove, garnish, slice, and enjoy!
