Buckwheat Banana Pancakes

A delicious, nutty and gluten-free alternative to the classic breakfast treat! These Buckwheat Banana pancakes are a healthier alternative, making for a fabulous breakfast option to start your day off on the right foot ! 

 

1 ripe banana, mashed

1 eggs

2 tablespoons Buckwheat Flour

1/2 teaspoon Baking power


  1. Mix all ingredients in a bowl until fully combined. Allow to stand for five minutes.
  2. Heat large fry pan over medium heat.
  3. Add large knob of butter to pan, and when fully melted, spoon 2 tbs of pancake mix into pan (mixture will make three 10cm round pancakes).
  4. Cook for 1-2 minutes, until lots of bubbles start to form on top and edges start to set. Flip pancakes and cook for a further 2 minutes, or until golden.
  5. Serve pancakes with your choice of toppings. We love to add a dollop of greek/natural yoghurt, honey and some fresh berries.
  6. The perfect, hearty breakfast !
