Buckwheat Banana Pancakes
A delicious, nutty and gluten-free alternative to the classic breakfast treat! These Buckwheat Banana pancakes are a healthier alternative, making for a fabulous breakfast option to start your day off on the right foot !
1 ripe banana, mashed
1 eggs
2 tablespoons Buckwheat Flour
1/2 teaspoon Baking power
- Mix all ingredients in a bowl until fully combined. Allow to stand for five minutes.
- Heat large fry pan over medium heat.
- Add large knob of butter to pan, and when fully melted, spoon 2 tbs of pancake mix into pan (mixture will make three 10cm round pancakes).
- Cook for 1-2 minutes, until lots of bubbles start to form on top and edges start to set. Flip pancakes and cook for a further 2 minutes, or until golden.
- Serve pancakes with your choice of toppings. We love to add a dollop of greek/natural yoghurt, honey and some fresh berries.
- The perfect, hearty breakfast !
