Dutch cocoa powder is natural cocoa powder that has been alkalized to remove its acidity and make it neutral. For many, this deepens the flavor of the cocoa powder because sugar (or other ingredients) don’t have to overcome the slightly acidic taste of the cocoa before enhancing its flavor. This means it cannot be used in recipes that use baking soda as the leavening agent, which relies on the acidity of the cocoa to activate it. Rather, Dutch process cocoa can be used in recipes that use baking powder for leavening.
