They can be used in soups and casseroles. Buckwheat kernels can be cooked like rice and eaten with meat and vegetables or added to salads and stir fries.

Buckwheat is a very nutritious gluten free grain.
The protein content of buckwheat is around 13%, similar to good hard wheat. However the quality of protein is far superior to that of wheat, other grains or many protein sources.
