Australian buckwheat farmers practise Sustainable Farming. They use no-till farming methods to control weeds. The buckwheat farmer’s grain is tested each year for chemical residues. It is 100% Australian grown buckwheat grown using Sustainable Farming methods. Buckwheat is a very nutritious gluten free grain. The protein content of buckwheat is around 13%, similar to good hard wheat. However the quality of protein is far superior to that of wheat, other grains or many protein sources.Proteins are classified by the NPU – the Net Protein Utilisation. Eggs 94% Brown Rice 70 Fish 80% Wheat Flour 47%BUCKWHEAT 74% Lentils 30% Buckwheat has an excellent Glycemic Index (GI) for a gluten free grain. The lower the GI the better for blood sugar, diabeties, and general health. 1 cup serve of Buckwheat flour: GI 44; Protein 15gm: Carbohydrate 85gm. For best results use Australian grown Buckwheat Flour and Kernels. The buckwheat flour and kernels are freshly dehulled and milled ensuring a mild sweet flavour, high nutrition and optimum baking qualities. Buckwheat is botanically a fruit and requires careful storage and processing to maintain freshness, flavor and baking quality.

GENERAL BAKING GUIDELINE- Buckwheat Flour
Buckwheat flour will produce a slightly heavier, moist, dense and nutritious cake or bread.
Adding Xanthan gum will reduce crumbling in some recipes (1/4 teaspoon Xanthan gum to approx 1 to 2 cups buckwheat flour will help).

Buckwheat Pancakes Recipe

  • 1 cup Buckwheat Flour
  • 2 teaspoons sugar
  • 1 teaspoon baking powder
  • 1 1/4 cups milk
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Sunflower oil, for the frying pan

Combine all ingredients, except sunflower oil, and mix until a smooth batter.

Heat frying pan or skillet on medium heat. Add sunflower oil and pour in enough batter for 1 or 2 pancakes. When bubbles start to form on top of pancake, turn pancake over to cook the other side.
