Super Easy Vanilla Slice Custard
Ingredients
2 sheets of puff pastry
500gm Patisserie Custard Mix
650mls cold water
1 tsp vanilla essence
650mls cold milk
250gm of Baker’s icing
Method
- Separate 2 sheets of frozen puff pastry and allow to defrost.
- Place one sheet at a time on a lightly greased or baking mat/paper lined oven tray. Don’t forget to peel the plastic sheet off the pastry.
- Lightly grease the base of a second heavy baking tray, place on top of the pastry.
- Bake in a hot oven for about 10-15 mins, or until the pastry is golden.
- Slip pastry off the tray onto a cooling rack. Repeat with second sheet of pastry.
- Place the custard mix, cold water, vanilla and milk in a bowl, add vanilla essence.
- Beat for 2-3 mins until very thick and smooth.
Assemble The Slice
- Place one sheet of cooked pastry in a foil lined tray. Pour on the custard, smooth out an even layer.
- Take the second sheet of pastry and place crumbliest side down, onto the custard.
- Fold the foil up around the edges, press the pastry firmly onto the custard.
- Soften the icing by sitting the tub in a dish of hot water.
- Scrape into a bowl and stir until smooth, add some passionfruit or the colour/flavour of your choice.
- Add a few drops of hot water if necessary to make a smooth consistency.
- Cover the top layer of pastry with a thin layer.
- Place in fridge, preferably overnight.
- Use scissors to cut the top pastry/icing layer into required squares. Cut the custard and base pastry with a thin, sharp knife. Keep cleaning the blade as you slice.
