Sultana and Oat Cookies

Enjoy these soft, chewy cookies with a cup of tea or pop in a lunch box for a mid-morning treat. 

INGREDIENTS

  • 1 cup shredded coconut
  • 1 cup natural sultanas
  • 3/4 cup rolled oats 
  • 1/2 cup brown sugar
  • 125g butter, melted
  • 1 tbsp honey
  • 1 egg, lightly beaten

METHOD

  1. Preheat oven to 190C or 170C fan. Line two baking trays with baking paper or silicone baking sheets
  2. Place dry ingredients in a large bowl and toss to combine. Combine melted butter, egg and honey and add to dry ingredients. Mix well.
  3. Roll mixture into 1 tbsp sized balls and place onto prepared baking trays. Press lightly with the back of a fork.
  4. Bake for 10-12 mins until golden. Cool on trays before storing in an airtight container.
