Gluten Free Banana bread
Makes 1 Loaf in our 600gm Tin
Ingredients:
500g Gluten Free Banana Bread Mix
2 large eggs
150ml oil
150ml water
2 ripe bananas mashed
Method:
1. Preheat your oven to 160 degrees C fan forced / 175 no fan
2. Oil your bread tin and line with baking paper
3. In a mixing bowl, combine Banana bread Mix, eggs, water and oil and mix on low speed with beater for 2 minutes or until just combined. (DO NOT OVER MIX)
4. Fold in mash banana with spatula.
5. Spoon batter into your bread tin
6. Bake for 60 minutes or until golden brown and firm to touch on top. Rest for 5-10 minutes in the tin; remove and place on a wire cooling rack.
We love it toasted with lashings of butter.
