Spooooky Ghost Cupcakes

Adorably spooky cupcakes for Halloween!

INGREDIENTS FOR MUFFINS:

  • 500g SNK Muffin Mix
  • 100ml Milk
  • 2 Eggs
  • 2 Tbsp Oil
  • 1 Cup Chocolate Chips (or other inclusions of your choice)

INGREDIENTS FOR GHOST TOPPINGS: 

  • 500g Icing Sugar
  • 250g Butter
  • 1 Tbsp Milk
  • 1 Tbsp Vanilla Essence
  • 12 Mini Reece's Pieces
  • Orange Food Dye
  • Icing Pens

EQUIPMENT:

  • 12 Muffin tray
  • Cupcake liners
  • Stand or hand mixer
  • Piping bags with small, large and star nozzle. 
  • Baking tray
  • Baking paper
  • 12 balls aluminium foil
  • Palette knife

METHOD: 

  1. Make muffin mixture as per recipe on the packet. Line a 12 muffin tin with cupcake liners and fill each one 2/3 full. 
  2. Scrunch aluminium foil into balls and insert between cupcake liners and muffin tray.
  3. Cook cupcakes as per recipe. Allow to cool completely on a cooling rack. 
  4. Make buttercream by creaming room temperature butter until it lightens in an electric mixer, then slowly adding the icing sugar to the butter. Whip for about 5 minutes until very smooth. 
  5. Set aside about 1/2 cup of icing and add in the orange food dye. Mix this and set aside. 
  6. Grab a baking tray, line with baking paper. Make sure that the baking tray will fit in the freezer.
  7. Add the white butter cream to a piping bag with a large nozzle. Pipe icing onto the cooled cupcakes to make a ghost shape. With a palette knife, smooth the icing to help form the ghost. Place the iced cupcakes upside down on the baking paper and place in the freezer for about 20 minutes. 
  8. Take cupcakes out the freezer and full off the baking paper, leave on the tray to finish decorating. 
  9. Cut the Reece's pieces into 2/3rds, keeping the bigger half (any little helpers might enjoy eating the discarded third). Place towards the bottom of the ghost. Using the small nozzle on the piping bag give the ghost hands. 
  10. Fill the star nuzzled piping bag with the orange buttercream, and pipe buttercream onto the top of the Reece's pieces to make them look like little cupcakes. Decorate if desired. 
  11. Grab the icing pen and give the ghost eyes (and mouth if room). 
  12. Enjoy!
