Fairy Bread Damper

This is a fun take on an Aussie classic for the kids! Or perhaps the grown ups!

An easy damper recipe with everyone's family favourite 100s and 1000s!

Ingredients

  • 250g Self Raising Flour
  • 1/2 tsp salt
  • 25g butter, chilled and cubed
  • 175 ml milk
  • 1/4 cup 100s and 1000s

Method

  1. Preheat the oven to 190C.
  2. Mix the flour with the salt in a large bowl. Add the butter and rub it into the flour with the tips of your fingers, until it resembles fine crumbs.
  3. Stir in the milk with a round blade knife (butter knife) to make a soft, but not sticky dough. Add 100s and 1000s gently mix.
  4. Turn out onto a lightly floured work surface and shape into a soft, smooth ball.
  5. Set the ball of dough onto a tray or baking sheet and flatten gently to make a round about 17cm across. Cut a deep cross in the dough and brush lightly with milk.
  6. Bake at 190C for 30 minutes until golden.
  7. Slice with sharf bread knife, spread with butter and top with more 100s and 1000s.
