Cupcakes
Makes 18-24 cupcakes. This basic cupcake recipe is a great canvas for you to create your own delicious flavoured cupcakes. Add any of the ingredients below to your own taste.
Dutch cocoa, sultanas, frozen raspberries, choc chips, chopped dates, flavouring or colouring.
Cupcake Ingredients
175gms butter
1 cup caster sugar
3 eggs
2 cups Self Raising flour
2 tsp vanilla essence
1 cup milk
Buttercream Frosting
100gms butter
200g bakers icing
Method
Cupcakes
Preheat oven 160*C fanforced / 170*C Electric
- Chop butter into small chunks and soften in a microwave for about 30secs.
- Add all the other cupcake ingredients to the bowl.
- Beat on low for about 1 minute, then on high until light and fluffy. (add in any mix ins or other flavourings/ colouring here)
- Spoon into patty papers, filling them ½ to ¾ full.
- Bake until golden, about 15-20 mins. Tip out onto a cooling rack, leave until cold.
Frosting
- Place bakers icing in a bowl and place over a bowl of hot water to soften.
- Beat the butter on high speed until soft, light and fluffy.
- Add in small amounts of bakers icing till combined and smooth, then slowly add more till all has been incoporated.
- Add colouring and/or flavouring if desired. Top with fun decorations.
