Christmas Pudding Truffles
Recipe makes approx. 50 pretty pudding truffles and are a delightful Christmas gift.
Ingredients
250gms plain sweet biscuits eg Marie biscuits
300gms melted SNK milk or dark Cadbury chocolate buttons
500gms SNK fruit mince
200gms extra choc buttons for coating
50gms Red and Green glacé cherries
- Place the biscuits into a tough paper bag, bash with a rolling pin until finely crumbed. Or you can use a food processor.
- Gently heat the chocolate buttons in a microwave safe bowl, stirring very often, until the chocolate is melted.
- Mix in the fruit mince and biscuits.
- Using your hands, shape into small balls, refrigerate until firm.
- Melt the extra chocolate buttons.
- Dip each ball in melted milk chocolate buttons, sit on baking paper to set.
- Coarsely chop a few red and green glacé cherries.
- When coated truffles are set, dollop a little white chocolate, royal icing or baker’s icing onto each and sprinkle on a little of the glacé cherries.
- Place in paper confectionery cups or on decorative serving platter.
- Store in fridge until ready to eat.
