Cheats Christmas Cake
This recipe is the boss 'too busy for a normal Christmas Cake'!
Ingredients
1kg Mixed fruit
600mls Big M (Coffee or Choc)
or 500ml flavoured milk and 100ml brandy, baileys, your choice of alcohol.
2 Cups S.R. Flour
1 tbs Mixed Spice
Method
- Pour the Big M over the Fruit. Soak overnight.

Next day, mix in self-raising flour and mixed spice.
- Preheat your oven to 180*C
- Pour into greased and base lined 1x10” or 2x8” cake tins.

Bake in the oven for upto 1.5 hours, until firm to touch.
- Leave in the tin for a while to cool a bit.
- Tip out onto a cooling rack. Store in an airtight container. Keeps for 1 week.
