Apple and Cinnamon Muffins

Recipe makes 12 muffins

These Muffins are quick and easy to make, great for packing into the school lunches or afternoon tea. If you like walnuts or pecans, just add ½ a cup to this recipe.

 

Preheat oven 180°C Fanforced / 190°C Electric/ Gas

 

DRY INGREDIENTS

500g SNK Muffin Mix

1 tbs Dutch Cinnamon

3 tsp Mixed Spice

1 cup Grated Apple

¾ cup Sultanas

 

LIQUID INGREDIENTS

100ml Water or Milk

2 Eggs

1/4 Cup Cold Pressed Sunflower Oil

 

METHOD

1. Place the Muffin Mix the bowl of an electric mixer.

2. Add the Dutch Cinnamon and the mixed spice to the dry ingredients and mix thoroughly.

3. Once mixed, add the water, eggs and oil to the dry ingredients.

4. Using an electric mixer on a medium to high speed, mix the ingredients together for 2 minutes.

5. When mixed, fold in the grated apple and the sultanas (if you would like the nuts, they can go in at this stage).

6. Spoon the mixture into your small or medium muffin pans (each should be 2/3rds full of mixture).

7. Place the muffins into a pre-heated oven and cook for 20-25 mins.
